GRANOLA - Apicot & Almond(or Walnut)
Makes 9 cups
Combine in a large bowl:
4 cups old-fashioned rolled oats
1/2 cup chopped slivered almonds
- Optional Substitution 3/4 cup Coarsely chopped Walnuts
l cup dry Carnation non-fat dry milk - Optional
Combine in pot; bring to boil, stir, then cool slightly:
1 1/2 cups firmly-packed brown sugar
1/4 cup water
Stir into above pot mix:
3/4 cup vegetable oil
2 teaspoons vanilla
2 teaspoons ground cinnamon
1/8 teaspoon salt - Optional for dry snack eating
Prep
1 cup dried apricots cubed ¼ inch(10 mm)
Stir pot mix into oat mix until all is moistened
Spread onto an ungreased l5x10 jelly roll pan (2 pans this size makes stirring easier)
Bake in VERY slow oven (200 degrees F) for 2 to 2 l/2 hours or until dry
STIRRING every 30 minutes
Add/stir in apricots after 1 1/2 hours of baking or right when taken out to cool
Cool. Store in an airtight container. Serve as a dry snack or with milk.
